My good friend Connie, who happens to be a fellow foodie and Food Blogger, lives one floor below me in our condo building. She is one of the best cookie bakers I have ever met. Every batch of cookies she bakes is sheer perfection. Connie has an amazing gift of creating the perfect batch of cookies and is also has a drooling reptoire of cookie recipes - including this insanely addictive lemon cookie recipe. You can’t stop at one of these cookies – it’s just impossible. These are soft, delicious and only require 5 ingredients to create lemony goodness!
Easy Lemon Cookies
Yield: 2-3 dozen

Total Time: 15 min
Ingredients:
1 boxed lemon cake mix
2 eggs
1/2 cup vegetable oil
2 tbsp icing sugar
1 tbsp lemon juiceDirections:
Preheat oven to 350°F. Grease baking sheet.
Combine cake mix, eggs and oil in large bowl. Beat until well blended. Shape dough into 1 1/2 inch balls. Place two inches apart on prepared baking sheets.
Bake at 350°F for 10-11 minutes (cookies will look moist). Cool 2 minutes on baking sheets. Remove to cooling racks.
While cookies are cooling, mix together the icing sugar and lemon juice to make a glaze.
Ice cookies with lemon glaze and enjoy!
