When I was in Whitehorse this summer, I went to the cutest bakery on Main St. called Baked Cafe. The coffee was fresh and strong and the baked goods were heavenly. I had a gluten-free blueberry yogurt crumble muffin and let me tell you – it’s worth the trip all the way to the Yukon! Making yogurt bread was on the top of my “to bake” list when I got home and I was surprised to find out how many recipes are out there in the blogosphere. This bread is easy to make and will fill your house with the warmth of fresh baked goods for the rest of the day. Adapted (slightly) from Closet Cooking

Simple Sundays: Strawberry Banana Yogurt Bread
 
Ingredients
  • 1 & ¾ cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons ground flaxseed
  • ½ cup brown sugar
  • 3 bananas (make sure they are over ripe!)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup Greek yogurt
  • 1 cup sliced strawberries
  • Directions
  • 1. Preheat oven to 350F
  • 2. Mix the dry ingredients together in a medium size bowl: flour, baking soda, baking powder, and salt.
  • 3. In a separate bowl, mix the remaining 7 ingredients together.
  • 4. Combine dry and wet ingredients together and mix well.
  • 5. Pour mixture into a well greased 9×5 loaf pan
  • 6. Bake for 60 min and allow to cool completely before slicing.
