I came across this great find of Jamie Oliver‘s (rather adorable) parents demonstrating how to make their favourite butternut squash soup.
I’m a big fan of butternut squash soup (BSS) so I was quite curious to find out what this SPICY version tasted like. Oh, before I forget, I learned a VERY IMPORTANT lesson during this process: unless you enjoy the feeling of burning hell fire, always use a paper towel or rubber gloves when cutting a hot pepper. Treat the thing like poison ivy. O.M.G. My hands are still burning as I type. If this happens to you, soak them in a combo of yogurt, milk and ice water for 5-10 minutes-it eases off the pain. I digress. This video is adorable and the soup was a really neat treat on this cool fall night.
Recipe from Trevor and Sally Oliver
Ingredients:
- 1 butternut squash
- 2 large carrots or 3 medium sized, chopped
- 3 celery stalks, chopped
- 1 clove of garlic
- 2 small onions, chopped
- 1 large red pepper, chopped
- 4 tablesooons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon curry powered
- 1 teaspoon sweet smoked paprika
- 1.5 Liters (6 cups) of Chicken Broth
- juice from half a lemon
- Preheat the oven to 375F.
- Cube the butternut squash and place on a roasting pan.



- Sprinkle the cumin, coriander, curry powder, paprika, and 2 TB of oil on top of the squash and use your hands to toss them together so that the coating is evenly distributed
- Place in the oven to roast for 25-30 minutes.
- Meanwhile, place a large pot on medium heat. Add 2 TB of oil and allow it to warm
- Add the garlic, celery, onion, carrots and pepper and stir ever couple of minutes for 10 minutes. (Veggies should be soft)
- Once squash is done, add it to the other veggies in the pot.
- Add the chicken broth and allow entire mixture to boil for 10 minutes
- Puree Soup with a hand blender for a couple of minutes until smooth
- Squeeze half a lemon (making sure the seeds don’t fall into the soup) and add salt and pepper to taste.
- Trevor says to drizzle a bit of Olive Oil on top before serving – I didn’t think it needed it.
