This recipe is near and dear to my heart because it comes from one of my closest and dearest friends, Michelle. Michelle and I are kindred spirits. She is the funniest woman I have ever met in my life. Sometimes, all I have to do is think of her and I bust out laughing. In fact, not only do we share the same birthday, but our husbands are 1 day apart. How coincidental is that?

Michelle has a fresh batch of Hello Dollies made at all times. When Ryan was studying for the LSAT’s earlier this year, there were times when Michelle would spontaneously pop by our house around bed time.  She would call my cell phone and ask us to come outside and there she was, smiling from ear to ear with batch of Hello Dollies wrapped in tin foil. All she wanted to do is say “Hi!”, give Ryan some words of encouragement, tell me a funny story (as she always does), and drop off a fresh batch of these yummy treats for us.

Yea, she’s a keeper. You don’t meet people like that everyday which is why she is so near and dear to my heart. This batch didn’t turn out as well as when Mish makes them, though. Her’s are the best.

Ingredients:

  • 1/2 cup melted butter (salted)
  • 1 cup of graham wafer crumbs
  • 1 cup flaked sweetened coconut
  • 1.5 cups of semi-sweet chocolate chips
  • 1 can of sweetened condensed milk (use 1/2 the fat version if you prefer)

Directions:

  1. Preheat oven to 350F degrees
  2. Mix the graham cracker crumbs and butter in a bowl
  3. Pour the cracker mixture into a 9×9 inch square pan and pat down to make the base
  4. Add 1 cup coconut on top of the graham cracker base-make sure the base is covered
  5. Layer 1 cup of semi sweet Chocolate Chips on top of the coconut
  6. Pour the sweetened condensed milk on top (*you might not need to use the entire can)
  7. Do not stir or mix
  8. Bake 30 minutes – squares should be lightly browned on topHello Dollies (Nut Free)
