Rumor has it that Ottawa will be getting a Whole Foods soon! I am ecstatic. I can’t wait to spend countless hours sampling delicious goodies in every isle. However, I am also worried – they don’t call it “Whole Paycheque” for nothin’. To give you an idea, a large container of the infamous curried chicken salad will run you about $30 CDN. And that’s no exaggeration. It’s worth it - it really is incredibly delicious, but the thought of spending (way too much) money on something I can make at home sparked a rather obvious idea. I’ll create my own version! Luckily, I had similar ingredients in my cupboard so I decide to go for it. In the end, I spent a fraction of the price and - dare I say – this version is soooo much better.
Curried Chicken Salad
Yield: Serves 4
Prep Time: 10 Min
Cook Time: 45 min (including cooking the chicken)
Total Time: 55 min (including cooking the chicken)
Ingredients:
3 1/2 cups cooked chicken - cubed or shredded
1 cup diced celery
1/4 cup diced red onion (or green onion if you prefer)
1/3 cup craisins
1/4 cup mayonnaise - to start
1.5 tablespoon curry powder
Hearty dash of lime juice
salt and pepper to taste

A quick and easy clean up tip for moist chicken is to place the breasts (bone in) in a large pot of boiling water for 35-45 min. Make sure to check to see if the breasts are fully cooked through. Once done, let cool for 10 minutes and dice or shred the chicken - whichever you prefer.
Place the first 4 ingredients to a large bowl and stir together.
Combine mayonnaise, lime juice and curry powered in a small dish and mix well.
Add the curry mayo and mix well so that the mayo is evenly distributed. Add more mayo of you prefer.
